Berry Burst Homemade Oreo Cookies Recipe

This week I am sharing some of my favorite Oreo Cookie flavor recipes in homemade form! I shared with you the Original Oreo cookie recipe, Birthday Cake Oreos, and Golden Oreos.  Today, I am sharing the Berry Burst (Ice Cream) flavored Oreos.  I did a little trial and error to get the perfect taste of fresh strawberry flavoring.  I think you will be happy with the outcome!

If you have never tried these Oreos, head to the store and grab some.  They are super-delicious and as all Oreos are, super-addicting!

Berry Burst Homemade Oreos
1 pkg Duncan Heinz Devil’s Food cake mix
2/3 C Crisco
2 eggs
Splash of vanilla

Mix all ingredients together, but don’t over-mix.  Use a melon baller to measure off the balls so they are all the same size.  I like to do about 1″ balls.  Roll them all then place them on an ungreased pan.  Bake at 375 degrees for 8-10 minutes.  In my oven, 8 minutes is the lucky number to getting these to be fluffy and not flat.  Don’t overcook or these will not be soft and chewy!  After baking, place them on the cooling rack. 

Fresh Strawberry Filling:
1/2 C Fresh Strawberries
2 sticks unsalted butter, cold but slightly soft
pinch of course salt
3 1/2 C powdered sugar, sifted
1/2 tsp vanilla

Beat together butter and salt until light and fluffy.  On low speed, add powdered sugar slowly and beat until well combined.  In a food processor or blender, puree strawberries until smooth then add 3T of it to the butter and sugar mixture along with vanilla. (you can save the rest of the strawberry puree for pancakes, smoothies, etc.)  Mix until just blended.  *Don’t over mix or the frosting will incorporate too much air.  Frosting will be dense and creamy.

Take a dollop of filling and place it on one cookie.  Take another cookie of its same size and smash the filling in between.  This is a great way to frost these cookies rather than using a knife to frost them because it will keep the Oreos thick and fluffy!  *Makes about 3 dozen sandwiched cookies.
