Chicken Parmesan
2 large chicken breasts thawed and halved
2 eggs, beaten
1 bag of croutons, ground
Marinara sauce
Mozzarella cheese
Pasta
Preheat oven to 350 degrees. Tenderize your chicken by putting them on a cutting board, placing Seran wrap over top, then beating them with a mallet (or in my case, a rolling pin). Next, dip your chicken into beaten eggs then roll into ground croutons. Place onto tinfoil-lined cookie sheet. Bake at 350 for 30 minutes, then take out and place mozzarella cheese on top and bake for 5 more minutes. Heat up marinara sauce and when chicken is done serve it over pasta and drizzle marinara sauce over top.
I like to use whole wheat noodles. The good thing about this recipe is that you can use any flavor of croutons you would like. You can also use any flavor of marinera sauce you would like! Very versatile, that’s what I like! I am not a huge fan of super-strong garlic so I just used plain croutons. I was actually out of marinara sauce this day so I substituted plain tomato sauce and it still tasted delightful.
