Pumpkin Protein Pancakes – healthy and yummy!

I have been making these for breakfast for not only myself but for my two girls as well.  I got the recipe from my personal trainer at Evolution Fitness in Layton, UT.  If you are looking for a healthy recipe for pancakes choose this one!  It tastes like a pumpkin dessert you would eat in the fall.  If you want to add chocolate chips to this for a little extra yum, I think it may taste like Pumpkin Chocolate Chip Bread!  Here is the recipe…

Pumpkin Protein Pancakes
(recipe makes enough for one serving, about 4 pancakes, 400 cals)

1/4 C canned pumpkin
1/4 C low fat cottage cheese
2/3 C old fashioned oats
1 egg
1 egg white
1 T honey
1/2 tsp cinnamon

Combine ingredients in a blender/processor until smooth.  Pour pancakes onto lightly greased griddle and cook until edges turn golden then flip.  Serve with sugar-free syrup and sprinkle with nutmeg!

    Canned pumpkin??really??we dont even have that in Oz but would roasted pumpkin work?:)

    Roast the pumpkin and then puree it really well until it is very smooth. If it’s too thick add a little liquid to it. Canned pumpkin has a consistency somewhere between peanut butter and mashed potatoes…best description I could come up with!ReplyCancel
