‘Egg’cellent Breakfast Recipes

It’s obvious that egg whites are super-healthy and an awesome source of protein.  Egg whites alone don’t taste very good for me, so I have found a few recipes that I love.  I eat the first recipe almost every single day.  They are easy to make and I always have all the ingredients on hand.  Both of these recipes taste ‘egg’cellent and keep me feeling very satisfied!  My kids love them as we’ll which is great because they’re so healthy!

Southwestern Egg Whites
(nutrition facts are based on the brands used above)
302.9 Calories, 32.5g Carbs, 20.5g Protein, 6.9g Fat

Ingredients:
2 egg whites
2 whole eggs
2T black beans, rinsed
2T salsa
1T mozzarella cheese
1 slice whole wheat bread

Combine egg whites and egg in bowl and whisk.  Pour into lightly greased and warm pan.  Scramble eggs and move to the side of the pan.  In the same pan add black beans and salsa.  Cook these while mixing them together, then once warm, mix into the eggs until well-blended.  Add the cheese on top and let melt.
Serve over toasted bread (no butter).
*This recipe also tastes awesome in a whole wheat wrap instead of on toast.



 Eggs in a Mug
(304.2 Calories, 28.6g Carbs, 26.5g Protein, 8.5g Fat)

Ingredients:
1 whole egg
1 egg white
3T diced ham or turkey
3T chopped peppers
2T mozzarella cheese
1 slice whole wheat bread

Lightly coat a soup bowl or large drinking mug with oil.  Place peppers in mug and microwave for 30 seconds.  Add the eggs to the mug and microwave for 45 seconds.  Take out the mug and stir the ham or turkey into the mixture and microwave for 20 seconds.  Sprinkle cheese on top and stir together.  Serve with whole wheat toast.
