There is nothing better in the Fall than fresh veggies in a sweet vinegar mix. We had the luxury this year of using cucumbers from our own garden! We planted Armenian Long cucumbers which work awesome for slicing and they are very crispy!
My mom tried out this recipe a few weeks ago and let me try it. It has now become my favorite. I posted this picture on my Instagram and had many people ask for the recipe. So…here it is:
3 Large Cucumbers, peeled and sliced
1/3 Cup Cherry Tomatos
1 Cup White Vinegar
3/4 Cup Water
1/2 Cup White Sugar
1 t. Agave Syrup
1 t. Salt
1/8 t. Pepper
Dash Dried Basil
Dash Parsley
Dash Cayenne Pepper
Refrigerate & Enjoy!

Fresh veggies in vinegar?? I’ve heard of this from a friend and didn’t believe that it would be very tasty. After seeing a recipe, I think I’ve changed my mind! I’m going to have to give this a shot. Pinning!

My father in law always makes vinegar cucumbers, but i’ve never made it myself. Thanks so much for sharing this. Now I can make it myself for a nice and cool treat!
Hmm, I love cucumbers with vinagrette dressing but haven’t ever thought of making my own vinegar topping like this. I am going to have to try this!
