This last week I have been mostly MIA from my blog, I apologize! Halloween for some reason this year wore me right out, and I have been trying to catch up on a few things around my home so that the upcoming holiday season can be relaxing and enjoyable.
I have been catching up on things like: backing up my pictures on my Mac, catching up on editing the girls’ home movies, laundry, taking down Halloween decor, putting up Thanksgiving, and cooking, yes, cooking. I decided to do freezer meals.
The reason I decided I needed to do this is because (a) every time dinnertime comes around I never know what I’m going to make (b) when I am in the kitchen cooking, my girls think it’s time to eat and dinner can’t get done fast enough (c) since it gets dark earlier, I just want to be lazy and snuggle in!
This was only my 2nd time doing them, but I’ve learned so much about them even since the first time. I was inspired by the idea used HERE. I have been cooking just a few hours for the last two days and hope to finish up my meals today. I spent around $140 and have about 29 freezer meals, and 4 quick&easy meals. I don’t plan on actually cooking again until the end of December or I’d love it to last til the first of January! With all of the holiday parties that will be coming up, I know that we won’t be eating at home every night! A lot of these meals are just normal things I make. I didn’t get them from a Freezer Recipe Book or anything like that. You can pretty much freeze anything, at least I think! I am no expert, but here are some of the meals I put together:
2 separate nights of Home-made Chicken Noodle Soup
2 separate nights of Poppy Seed Chicken Casserole
3 separate nights of Tacos
3 separate nights of Twice Baked Potatoes
3 separate nights of French Dip Sandwiches
2 separate nights of Home-made Potato Soup
1 night of Baked Macaroni & Cheese
2 separate nights of Chicken & Veggie Stir Fry
1 night of Spaghetti & Meatballs
2 separate nights of Pizza
1 night of Lasagna
2 separate nights of Bean & Cheese Burritos
2 separate nights of Pulled BBQ Chicken Sandwiches

I figured that some of these meals can be used as lunches too, but I am going to mostly save them for dinners. Some of the meals like Chicken Noodle Soup and Stir Fry, I didn’t have to cook at all. I just threw all the ingredients in a freezer bag and will throw the soup in the crockpot all day and will throw the stir fry in the frying pan (and cook the rice). Some of the meals I will have to cook rice with or noodles with. Also, on the sandwiches, I will have to go to Maverick (our local gas station) and get their French Bread or Rolls. If you have a Maverick near you it is a MUST that you try their bread/buns/rolls. They are the best I’ve ever had. I don’t remember the last time I bought those things from a grocery bakery.
For the pizza, no, it’s not home made! I figured you have to have a few frozen pizzas in there somewhere, right? And another good thing about these meals is that I know there will be enough left over for my hubby to take to work the next day! Hoping this will save us money as we won’t have to eat out as much, my hubby won’t have to eat out at work, and now the only things we will need to buy at the grocery store are my staples. (staples for me is usually fruit, yogurt, milk, bread, eggs).

Grilled Cheese & Tomato Soup
