Reese’s Peanut Butter Cup Truffles

WOW!!  That’s all I have to say!  These babies taste just like Reese’s Peanut Butter Cups.  The recipe is easy and these not only taste gourmet, but they look gourmet as well.  These are the perfect treat to give as a gift.

Reese’s Peanut Butter Cup Truffles
Ingredients:
-1 cup (2 sticks) butter, softened
-1 lb powdered sugar (about 3.5 – 4 Cups)
-1 cup peanut butter
-1 sleeve graham crackers (about 10-12?)
-dipping chocolate, melted

Crush graham crackers until fine.  Mix butter, powdered sugar, peanut butter, and graham crackers together in large bowl. Roll into 1″ balls. Place rolled balls on large cookie sheet (I lined my cookie sheet with parchment paper) and stick in the freezer for about 20 minutes. In the meantime, melt dipping chocolate. Once the peanut butter balls have set up, dip in chocolate and place back on cookie sheet. Let set up before serving/sharing with neighbors (but you can pop a few in your mouth just to test them and make sure they are safe to eat- it’s a chance that I am always willing to take).

Makes 6-7 dozen truffles.

Time:  about 60-90 minutes.

Tips and tricks for this recipe:
**Don’t skimp on which chocolate you choose to dip your peanut butter balls in.  I bought two different packages of chocolate chips to see if I could taste a difference.  One bag was just normal Nestle Milk Chocolate Chips, the other bag was specialty chocolate chips made from Belgian Chocolate.  After tasting the ones made from the latter, the Nestle ones didn’t taste near as good!  I’m telling you people, find a good, quality chocolate!
